新しいコラボ

ずっと以前から私のお気に入りだった「丸文食堂」（小松町）で、まこもの料理に取り組んでくださることになり、新メニューの紹介に招待してくれた。
ここは代々つづく老舗の食堂を今の社長さんが、安心できる食材を使ってどんな世代の人にも食事を楽しんでもらいたいということでしていらっしゃる。
スタッフも若い人が多い。店長は女性、料理長も若くて素敵な男性(^.^)。お客さんも若い人が多い。女性が多い。でもお遍路さんも来ていた。夜はまた昼間と雰囲気が変わるので、年齢層が少し高くなる。
で、丸文で食べたまこも料理は、絶品だった(^.^)　私も最近家で毎日新メニューを開発？しているが、これはかなわない～。でも、あつかましくも、生のサラダもいいとか中華もいけますよ～等と、言ってきてしまった(^^ゞ相変わらず、プロを相手に怖いもの知らずだ(~_~;)
ここの食材は、有機農法とか無農薬とかを中心にとにかくこだわりの食材。まこもも私がいろいろ味付けしてしまうのに対して、まこものほんのりした甘味とかシャキシャキ感を活かした料理をしてくれていた。
とにかくこういうお店で、きれいな水でいい空気の中で作られたまこもが、皆様に喜んでもらえるのは、何より嬉しい。最近農業にはまりそうな私です。
