秘密のレシピ

今治に、ハイソな？スイート好きの奥様がお気に入りの「お菓子教室」がある。
暗黙のうちに、そのレシピはどうやら門外不出らしいのですが、友人がこっそり教えてくれました。もう教えてくれてから、かなり時間がたっているので、時効ということで、皆さんにもお教えします。
連休、バレンタイン用に手づくりする人のために・・・・

＊＊＊ハートのチョコレートケーキ＊＊＊

～材料～
２１センチ　デコ型・ハート型５個分（５人もにもあげるの(^_^;)
ココアスポンジ
　　＊卵Ｍ寸　４個　　　　　　＊砂糖　　１５０グラム
　　＊粉　１１０グラム　　　　 ＊ココア　　１８グラム
　　＊シナモン　　小さじ１　　＊バター　　３５グラム
仕上げ
　　＊杏ジャム　　５０グラム（ツヤだし用）
　　＊コーチングチョコ　　２００グラム
かざり（写真は飾りなし）
　　＊スイートチョコ　１００　　＊生クリーム　５０グラム　
　　＊ラム酒　　小さじ１

～作り方～
１．卵をほぐし、砂糖を加え、湯煎で温めてからホイップ。
２．よくなじんだら、粉、ココア、シナモンのふるったものを加えて混ぜ、熱いメルトバター（溶かしたバターのこと）を加えて混ぜ、型に入れて、オーブンへ。
３．１７０度で１５分焼く。
　　（１６０度だと、２５分から３０分）
４．杏と砂糖の練ったものをケーキに塗り、溶かしたコーチングチョコをかける。
５．飾り付けをしたい時は、生クリームを湯煎直前に温め、スイートチョコの刻みを合わせ溶かし、ラム酒を入れて、ホイップし、デコレーションする。

注意するのは、型に入れるときには、剥がれるようにリケイ剤（バターでＯＫ）をぬること。
焼き縮みさせないために、焼けたら型からすぐはずすこと。
写真は、仕上げに、ココアパウダーをかけています。

とにかくこの配合は、絶妙でした。
最近、私もケーキを焼いたりすることがめっきり減ってしまったのですが、是非、皆さんも試してみてくださいね。
